In The Pink

I'm here to tell you that beets really do cook up red. Very red. My kitchen looked like a massacre occured, but the Borscht turned out great! What my cookbooks call eight servings, to me, is 16 or more. Imagine the biggest cooking bowl possible and then imagine it full of yummy pink soup.
